Stuffed Vegetables.

 4 - 6 servings.

Ingredients

 Veggies to be stuffed (2 of each):

Potatoes, bell peppers, green peppers, small egg plants, onions and tomatoes. 

 Stuffing:

3 lbs. ground beef (20%. Fat or less)

1 onion chopped and fried till golden

5 garlic cloves - minced

1  tomato - chopped

1/2 cup cooked rice (5 minutes only)

1/2 cup pine nuts

1/2 bunch chopped parsley

1/2 bunch chopped cilantro

1 egg

6 oz. tomato sauce

1/2 cup raisins

1 full tbs. Baharat (can be found at the Israeli grocery store) OR supplement it with 1 tsp. cinnamon, and 1 tsp. spoon cumin)

1 tsp. tumeric

1 tsp. paprika

1 tsp. lemon juice

ground black pepper + salt

 Sauce:

water – enough to cover veggies to the top

12 oz. tomato paste

1 tsp Harisa (can be found at the Israeli grocery store) OR 4 red hot peppers

1 onion – chopped

½ bunch chopped parsley

½ bunch chopped cilantro

1 whole garlic in its shell

1 tbs. Baharat (or cinnamon plus cumin)

1 tsp. tumeric

1 tsp. paprika

Black ground pepper + salt

                 Preparation:

Stuffing:mix ingredients in a bowl and refrigerate till veggies are ready.

 Peppers: cut and remove top and seeds

Potatoes, tomatoes, onions and eggplants: cut and remove top, carve out content with a potato peeler and leave about 1/4" all around. Stuff veggies to the top arrange in a wide pot.

Sauce: mix all ingredients and pour over veggies. Bring to a boil, reduce to lowest flame, cover and cook for ½ an hour. Once in a while, pour sauce on to veggies with a turkey baster.

 And finally…just before serving: Transfer veggies to a baking dish, pour ½ of the sauce into the dish and bake for ½ an hour or till sauce is reduced to ½, pouring, once in a while sauce on to the veggies with a baster.

  Shopping tips:

 Shopping for veggies is an adventure!!! Especially when done together! Do not hesitate to touch, squeeze and sniff!

Peppers, potatoes and squash should be wide and not too tall, so they can fit in your pot. Parsley and cilantro should have that strong fresh scent.

I wish you could have seen it.  As soon as that first bite landed on my tongue, I screamed "Holy %$@" and part of it went flying out of my mouth!!!  How could something be soooooo delicious?!!!  I swear, you can really taste the Love that was put into the food by everybody.  That made it even more special to eat.  It was really fun meeting new people, and right from the start, it was so comfortable because we were all getting busy together in the kitchen.  And as we were gathered around the butcher block chopping and preparing, sipping wine and nibbling on appetizers, the jokes started to fly, and so did the playfulness and interesting conversation.  You and Motty are such a yummy couple.  May you have many, many wonderful years together...and lots of parties!!!  Love you.
